This delightful
chicken salad has a creamy, tangy, sweet dressing packing a flavor punch to
elevate your taste buds, adding flair & variation to the traditional
mayonnaise-y chicken salad croissant version. A symphony of apples,
grapes, cranberries, and nuts beautifully complement each other, adorning each
bite. One of my lunchtime favorites!
Chicken Apple Salad
- 2 cups diced cooked chicken, rotisserie preferred
- 1/2 cup chopped
walnuts or sliced candied almonds
- 1/3 cup dried
cranberries
- 1 cup finely
diced apples Honeycrisp preferred
- 1/2 cup grapes,
sliced in quarters
- 1/3 cup thinly
sliced green onions optional
Dressing
- 1/3 cup mayo (for
a healthier version, use avocado-based like Sir Kenssington's
brand)
- 3 tablespoons sour
cream
- 1-1/2 tablespoons honey
- 2 teaspoons to 1-1/2 tablespoons apple cider vinegar**see note**
- 1-1/2 teaspoons Dijon-style mustard
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Instructions
Whisk
dressing ingredients together in a small bowl until smooth.
Combine
the salad ingredients in a large bowl. Toss well. Taste and adjust to personal
preference.
Enjoy!
Serve in sandwiches, on sliced apples, on lettuce boats, with crackers, etc.
**Apple cider vinegar
note** Choose your dressing thickness….less vinegar will give you a
thicker dressing.
