These meatballs were so yummy! I didn't have any evaporated milk, so I substituted whipping cream instead. We served them with rice.
Ingredients:
1 egg, lightly beaten
1 can (5 oz.) evaporated milk
1 Cup Quick Cooking Oats
1/2 C. finely chopped onion
1 tsp. salt
1 tsp. chili powder
1/4 tsp. garlic powder
1/4 tsp. pepper
1 1/2 pounds ground beef
SAUCE:
1 C. ketchup
3/4 C. packed brown sugar
1/4 C. chopped onion
1/4 tsp. garlic powder
In a large bowl, combine the first 8 ingredients. Crumble beef over mixture and mix well. Shape into 1 inch balls. Place onto shallow baking pan. Bake at 350 degrees for 18-20 minutes, and afterwords drain the pan of any excess grease.
While it is cooking, combine the sauce ingredients in a sauce pan. Bring to a boil. Reduce heat and simmer for 2 minutes, stirring frequently. Pour over the meatballs when they are done, then bake for about 10 minutes longer.
This recipe made 2 dozen meatballs.
