Recipe from: Nikki Jones
1 c. flour
1 Tbsp sugar
1 tsp baking powder
1 tsp ground ginger
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon
dash ground cloves
2 Tbsp molasses
1 Tbsp veggie oil
1 c. buttermilk
1 egg lightly beaten
In large bowl, mix all dry ingredients. In small bowl, whisk molasses, oil, buttermilk & egg. Slowly pour the mixture in to the flour mixture & stir till uniform. Lightly grease a pan over medium-low heat & cook pancakes for about 3 min. on each side. Makes 6 medium pancakes.
