Recipe from: Shiree Christensen
1 cup buttermilk
2 cups flour
2 cups sugar
2/3 cup unsweetened cocoa
1/2 teaspoon salt
2 eggs
1 cup vegetable oil
1 teaspoon vanilla
1 cup boiling water
1 teaspoon baking soda
In large bowl, mix together all ingredients except the water and baking soda. Mix until batter is smooth. Add soda to the water, then add soda/water mixture to the batter. Mix well - batter will be thin.
Pour batter into a greased and floured 9x13 pan and bake at 350 degrees for 35-45 min or until middle is set.
Frosting:
1/2 cup of butter
2 tablespoons of shortening
1 cup of baking cocoa
8 oz cream cheese
3 cups of powdered sugar
1 teaspoon vanilla
Melt butter and shortening. Whisk in cocoa and stir until smooth. Let cool until it is cool enough to touch. Add cream cheese and mix thoroughly. Add powdered sugar and vanilla. Mix well.
