Such a simple idea, but the pepperjack cheese is really what made this recipe as one of my new favorites!We served it with a side of herbed rice.
4 boneless, skinless breast halves
4 thick slices pepperjack cheese
1 cup BBQ sauce
Carefully cut a pocket in each chicken breast half. Fill with cheese; secure with metal or soaked wooden skewers (toothpicks worked fine).
Grill chicken, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or a meat thermometer reads 170°, basting frequently with barbecue sauce. Yield: 4 servings.

Mmm......... sounds yummy!! And I have all those ingredients! I'll have to make it for dinner tonite.
