*Original Brown Recipe
6 lbs. tart apples
6 C. cidar or apple juice
1/2 C. vinegar to make it more spicy
3 C. sugar
2 tsp. cinnamon
Core and quarter unpeeled apples. In a 6-qt. kettle, combine apples and cidar. (Mother uses her steamer). Cook until apples and cidar are soft--about 30 minutes. Press through food mill. Boil gently 30 minutes, stirring occasionally. Add sugar and spices. Cook and stir over low heat until sugar dissolves. Boil gently, stirring frequently until it reaches the desired consistency. Ladle hot apple butter into clean hot jars. Process in boiling waterbath for 10 minutes to seal.
