Laura's Chicken Bowtie Salad

This is a combination of several of my favorite chicken salad recipes. But for those that were at Mistis "goin' back to college luncheon" at Joannes, then you had this yummy salad.


Pretty much make it the way you want. Take out what you don't like and if there is something else you wanna add, go for it. Make it to your taste. I just LOVE the cranberries in this salad!

I pretty much always follow a recipe but in this case, as far as the measurements go, I went by what looked good. But I will put down the approximate measurements.

This made a ton! Had it for several days afterwards. Really yummeeee!!!

1/2 lb or so of bowtie pasta
2-3 cooked chicken breasts or shredded turkey
2 cut up apples
2 handfuls of grapes, cut in half
1-2 handfuls of cranberries cut in half
2 oranges, peeled into segments then cut in 1/3
2-3 celery stalks, diced
1 c. of walnuts or sliced almonds
2-3 green onions cut up real fine
2 zucchini, diced
1/2 red onion diced
2 Tbsp. orange juice concentrate
1 1/2 Tbsp. brown sugar
1 Tbsp. red wine vinegar

The next two ingredients, the measurements are whatever consistency you like and what looks good to you.

Mayo or Miracle Whip (start with 1/2 c. or so and add more if you like)
Cool Whip (start with 1/2 c. or so and add more if you like)

To give it some flavor, I season the chicken with McCormicks chicken seasoning and then grill the chicken on my George Foreman grill or BBQ it. I also toast the walnuts (or almonds) 2 Tbsp. butter and 1 Tbsp. sugar. Saute till it looks toasted. 5-7 min. on med heat and stirring the whole time. This really makes the taste of the walnuts stand out. Cut up all fruits and veggies and mix rest of ingredients together in a big bowl and fridgerate for at least 2 hrs.
