Recipe from: Shae Johnson
I heard so many good things about this salad that I had to give it a try! If you don't have the ingredients for the dressing, you can top it with your favorite such as ranch or italian.... but the dressing is good! The salad was DELICIOUS and I will be making this again and again.
3 tbsp. concentrated apple juice (can be frozen)
3 tbsp. light corn syrup
1 tsp. cidar vinegar
2 tsp. firmly packed brown sugar
1/8 tsp. garlic salt
Dash pepper
1 pkg. refrigerated cheese tortellini
2 C. chopped apples
2 C. shredded salad greens (I used Romaine)
1 C. of mandarin orange slices or strawberries (I used both)
¼ C. sliced green onions
2 tbsp. pine nuts or walnuts
Craisins, raisins or cranstrawberries
Combine apple juice concentrate, corn syrup, vinegar, sugar, garlic salt, and pepper. Cover and refrigerate. Cook tortellini according to package directions. Drain and cool thoroughly. In a large mixing bowl, combine tortellini and remaining ingredients. Toss gently with apple juice dressing. Serve immediately.
