Chocolate Gold Nuggets

Oooeey Goeey Balls of Goodness.... How I luv thee!
I like to make these for FHE since the kids can get involved in helping roll into balls, they're easy and oh so yummy!





 Ingredients:
 1 (14 oz.) bag caramels
 3 Tbsp. water
 1/2 cup chopped pecans (if you dont like nuts, omit & add 1/2 c. Rice Krispies)
 1 cup Rice Krispies
 3 cups milk chocolate chips (or use choc.candy coating used to make candy)
 1 1/2 tsp. shortening
*Another variation is to add 2-3 handfuls of mini marshmallows which I just love!
Line 2 baking sheets with wax paper and spray with non-stick cooking spray (this is super important. These babies are sticky!)  In a medium saucepan combine caramels and water and cook over low heat. Stir until smooth. Stir in rice krispies, mallows(opt) and nuts (opt).
Let it cook on low for about 12-15 min. and stir every few min.  Drop "blops" onto the waxed paper. Refrigerate them for about 15 min. to harden them up.  Generously grease your hands.  (Very important!) Roll into balls. In a small saucepan, melt chocolate chips and shortening. You can also use the chocolate candy coating that you would use to make candy. I like choc. chips better because it melts smoother. Coat each ball with chocolate and place onto baking sheet. (dont get water in choc. or it will harden) Store in airtight containers.
