Recipe came from a Princess and the Frog cookbook that Stu bought at Disneyland for Brooklyn. These are pillow shaped french pastries which is a New Orleans style doughnut. Pronounced Bin-yeah.
I didnt want to make these since they are fried in oil but Brooklyn has been asking a long time to make them. I just thought ok, we'll make a few and she'll eat em. Well, not so, I couldn't help
but eat a couple. Oh so yummy! Reminded me of the days when mom would make scones with us.
3 c. flour (divided)
1/3 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. nutmeg
1 c. buttermilk
1/3 c. water
1 egg, beaten
1/2 tsp vanilla
veggie oil for frying
Powdered sugar for dusting
jam
honey
1. In med. bowl, mix 2 3/4 c. of the flour w/ the sugar, b. powder, b. soda, salt, and nutmeg. Whisk everything together.
2. In large bowl, whisk together buttermilk, water, egg and vanilla. Stir in the flour mixture from step one.
3. Use some of the rest of the flour to dust work surface. Flatten dough. Dust top w/ more flour if it gets sticky. Then slice dough into 2 1/2 in. squares
4. Heat 2 in. of oil in heavy saucepan til temp. reaches 325 on deep fat thermometer. Check temp every so often. May get too hot, turn down a little.
5. Carefully drop dough squares into hot oil. Fry 1 1/2 min.- 2 1/2 min, turn over and continue frying for another minute. Use slotted spoon to transfer beignets to paper towels. Dust beignets with powdered sugar or cut in half and top with jam or honey.
