If you luv pesto, you'll LUV this dish! It's absolutely divine! My family luvs it and is one of our top favorites. We even had it 2 nights in a row!! Its healthy too if you use whole wheat pasta.
Angel hair pasta tossed with fresh bruschetta marinaa, fire grilled chicken breast in a balsamic glaze and parmesan shavings. You do need to plan ahead. Chicken needs to marinate at least an hr.
BALSAMIC GLAZE
1/2 c. balsamic vinegar
1/3 c. dark brown sugar
1 tsp. molasses
1/8 tsp. salt
BRUSCHETTA MARINARA
2 c. diced tomatoes (about 4)
1/4 c. tomato sauce
1/4 c. chopped basil (I buy the squeeze tube)
1/4 c. olive oil
1 tsp. white vinegar
2 tsp. minced garlic
3/4 tsp. black pepper
1/2 tsp. salt
CHICKEN MARINADE
2 c. water
1 Tbsp. salt
1/2 tsp. paprika
1/4 tsp liquid smoke (dont go w/ out this)
1 lb. chicken breasts
olive oil
ground pepper
1/2 lb. angel hair pasta

Make the balsamic glaze by mixing balsamic vinegar, brown sugar, molasses, and salt in small saucepan. Put over med/low heat and heat the mixture til bubbling. Then simmer for 5 min. Remove from heat & cool.
Make the bruschetta marinara by mixing tomatoes, tomato sauce, basil, olive oil, white vinegar,
garlic, pepper, and salt in small bowl. Cover and set aside.
Marinate the chicken by mixing the water, salt, paprika, and liquid smoke in med. bowl. Pound chicen breasts til 3/4 in. thick, then add to the marinade, cover & chill for 1 hr. Preheat grill to hi heat. When chicken has marinated, remove the breasts from the brine, rinse under cold water, and blot dry. Rub each breast with oil & sprinkle with little bit of pepper. Gill the chicken for 5 min. per side or til cooked.
Boil the pasta and drain. Preheat med. sauce an on med. heat. Add 2 tsp. olive oil to pan and 1/4 of the cooked angel hair pasta. Add 1/2 c. of bruschetta marinara and 1 Tbsp. grated parm. cheese and toss with tongs til hot. Turn out the pasta onto the center of a plate and drizzle with balsamic glaze. Slice the chicken and arrange 1/4 of the chcken around the pasta, thn sprinkle 1 Tbsp. of grated parm. cheese over top, followed by 1sp of minced parsley. Repeat for rest of servings.
*Tip* Use a squirt bottle to apply the marinade evenly. This is a great make-ahead meal for next day. If you want, you can marinate the chicken overnite and make the glaze and marinara sauce ahead of time.
