Krista's Quinoa Salad

1 cup quinoa

2 cups water

1/4 tsp salt

1 cup red cabbage chopped

1 cup shelled cooked edamame (i didn't use this because it has soy in it)

1 cup red bell pepper  chopped

1/2 cup shredded carrots

1 cup diced cucumber

1/2 cup sliced grape tomatoes

Dressing:

1/3 cup soy or tamari sauce

1 tbsp sesame oil

1 tbsp rice wine vinegar

2 tbsp chopped green onion

1/4 cup chopped cilantro

1 tbsp sesame seeds

1/4 tsp grated ginger

1/8 tsp red pepper flakes

salt and pepper to taste


Directions: Add water, quinoa, and salt to a medium saucepan and bring
to a boil over medium heat.  Boil for 5 minutes, then turn heat to low
and simmer 15 minutes or until water is absorbed.  Remove from heat
and fluff with a fork.

Place quinoa in large bowl and add cabbage, edamamame, red pepper,
carrots, cucumber, and tomatoes.  Set aside.

In a small bowl, whisk together the soy sauce, sesame oil, rice wine
vinegar, green onions, cilantro, sesame seeds, ginger, red pepper
flakes, salt and pepper.  Pour dressing over quinoa salad and stir to
combine.
