Nutty Cran Apple Salad

Several of you requested the yummy salad I brought to Easter Dinner. Enjoy!



Ingredients
  • 1 bag spring salad mix 
  • 1 bag romaine 
  • 3 oz Oscar Mayer real bacon
  • Chopped Red Onion
  • 1/2 cup dried cherries or cranberries
  • 1 large granny smith apple, chopped
  • 1/2 cup toasted pecans or almonds in butter & brown sugar
  • 5 oz  Gorgonzola or blue cheese crumbled
  • Grilled chicken strips
  • Cherry tomatoes
Directions
Wash lettuce, place in large bowl and top with ingredients - toss.  

Tips
-You can add more or less of each ingredient - do what you prefer.  

-Add lemon juice to chopped apple to keep from browning.  Add as much or as lil salad dressing to your liking at the last minute so doesn't get soggy then toss. Or individual servings can add their own dressing.

-To toast almonds or pecans - place in skillet on medium high heat with butter,  stirring until they are toasted. Add brown sugar and lil bit of cinnamon for flavor if desired.

SWEET BALSAMIC DRESSING 

Ingredients
  • 1/2 cup olive oil or avocado oil
  • 1/3 cup stevia 
  • 3 TBSP good quality balsamic vinegar ( I used Trader Joes )
  • 1/8 teaspoon dry mustard (or a little squeeze of Grey Poupon)
  • Few twists of fresh cracked pepper
Directions
Whisk all the ingredients together, until sugar and oil are blended.  It takes a few minutes for the oil and sugar to blend.  Keep whisking....it will blend.
