Gluten-Free Apple Crisp

Sometimes it can be challenging to find a healthy, gluten free recipe that is simple and yummee that the kids will eat.  But that doesnt stop me from finding a 'winner' my family will love.  We sure enjoyed this dish of apple deliciousness tonite! Theres nothing better than a healthy, delicious hot apple crisp that makes your taste buds happy! And perhaps if you prefer to live a little, harmonize with a scoop of vanilla bean ice cream to cool it down.    Because every once in awhile we gotta enjoy lifes simple pleasures.  :) 



INGREDIENTS 

  • 6 large Granny Smith apples chopped 
  • ½ cup coconut sugar (I used honey)
  • ½ tsp cinnamon
  • 1 cup water 
  •  ¼ tsp vanilla extract 
  • ¾ cup gluten free rolled oats 
  • 1 cup almonds (I used cashews)
  • ⅓ cup coconut oil, melted


  1. Preheat oven to 450.
  2.  In a saucepan over medium heat, combine the apples, water and HALF of the coconut sugar, cinnamon & the vanilla extract. Cook the apple mixture for 10 minutes half covered and stirring occasionally. 
  3. While the apples are stewing, combine the oats, almonds, coconut oil, and the REST of the coconut sugar, cinnamon and vanilla extract in a food processor for 30 seconds to a minute until the desired texture is reached. I like to keep some chunky bits in there to get the crunch of the almonds. (I used blender)
  4. Place the stewed apples in a 8 or 9 in. baking dish and top with the oat/almond mixture. 
  5. Place in the oven and bake for 15-20 minutes or til the top of the crumble starts browning. 
  6. Serve warm with some coconut or vanilla ice cream.
