Sometimes it can be challenging to find a healthy, gluten free recipe that is simple and yummee that the kids will eat. But that doesnt stop me from finding a 'winner' my family will love. We sure enjoyed this dish of apple deliciousness tonite! Theres nothing better than a healthy, delicious hot apple crisp that makes your taste buds happy! And perhaps if you prefer to live a little, harmonize with a scoop of vanilla bean ice cream to cool it down. Because every once in awhile we gotta enjoy lifes simple pleasures. :)
INGREDIENTS
- 6 large Granny Smith apples chopped
- ½ cup coconut sugar (I used honey)
- ½ tsp cinnamon
- 1 cup water
- ¼ tsp vanilla extract
- ¾ cup gluten free rolled oats
- 1 cup almonds (I used cashews)
- ⅓ cup coconut oil, melted
- Preheat oven to 450.
- In a saucepan over medium heat, combine the apples, water and HALF of the coconut sugar, cinnamon & the vanilla extract. Cook the apple mixture for 10 minutes half covered and stirring occasionally.
- While the apples are stewing, combine the oats, almonds, coconut oil, and the REST of the coconut sugar, cinnamon and vanilla extract in a food processor for 30 seconds to a minute until the desired texture is reached. I like to keep some chunky bits in there to get the crunch of the almonds. (I used blender)
- Place the stewed apples in a 8 or 9 in. baking dish and top with the oat/almond mixture.
- Place in the oven and bake for 15-20 minutes or til the top of the crumble starts browning.
- Serve warm with some coconut or vanilla ice cream.
