At least once a month, I like to make breakfast for dinner, and this is often on the menu. If you have a little bit of time to make breakfast or for a brunch, this is perfect!
At least once a month, I like to make breakfast for dinner, and this is often on the menu. If you have a little bit of time to make breakfast or for a brunch, this is perfect!
Ingredients:
2 cups old fashioned rolled oats
1/3 cup light brown sugar
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 tablespoon orange zest
1 1/2 cups strawberries, sliced and divided
1/2 cup peanut butter chips, divided
2 cups fat free milk
1 large egg
3 tablespoons butter, melted
2 teaspoons vanilla extract
1 ripe banana, peeled, cut into 1/2 inch slices
Directions:
Preheat oven to 375 degrees. Spray the inside of a 9x13
baking dish or slightly smaller one if you have it, very well with cooking
spray.
In a large bowl combine the oats, brown sugar, baking
powder, cinnamon, orange zest, half of the strawberries, and half of the peanut
butter chips.
In another large bowl whisk together the milk, egg, butter,
and vanilla extract.
Place the oat mixture into the prepared baking dish. Arrange
the remaining strawberries, peanut butter chips over top and all of the banana
slices on top. Pour the milk mixture over the entire dish, giving the dish a
little shake to make sure the milk mixture is incorporated into the oats.
Bake for 30-35 minutes or until the top is golden brown and
the milk mixture is set.
