Beet Treats & Superfood Treats

Now that summer is out, we have a day each week that we have fun making healthy, new recipes.  The kids just loved these sweet balls of goodness! I picked up this recipe at Rosauer's grocery store, but ended up changing it a little. They are also really easy and quick to make. 
I didn't have an lemon extract on hand so I used orange extract instead and still turned out super delicious! Original recipe called for hemp seeds but after tasting them, we decided they needed a lil more crunch so nuts were added instead.   Feel free to add a lil more honey or nuts more tailored to your tastes.  I also purchased unprocessed coconut flakes that were a lil more fine than regular coconut flakes.  The beet powder and wheat grass powder can be found in bulk section.  The powders are also sold individually under Pines Beet Juice Powder and Pines Wheat Grass Powder.  
Depending on the kid, you may not want to let them know theres even beet powder or wheat grass powder in these balls.  wink wink....   😉  



For Beet treats
2 Tbsp. Beet powder 
For Superfood treats
2 Tbsp. Wheat Grass powder
3 Tbsp. crushed up nuts (lil bigger than grain of rice)
1 1/2 c. almond flour
1/3 c. coconut flour
1/2 tsp. Himalayan salt
1-2 Tbsp. honey or real maple syrup
2 tsp. lemon extract
1/4 c. coconut oil, melted
3 lemons, juiced 

Squeeze juice from 3 lemons into bowl.  Chop nuts and add to lemon juice.  Add rest of ingredients. Roll in finely shredded coconut. Refrigerate 10-15 min.
