Fresh Peach Cobbler

With peach season among us, this recipe was calling my name tonight.  Brooklyn wanted to try an easier cobbler recipe but I know a great recipe when I see one.  :)   Oh how this cobbler was everything we dreamed of and more!   Warm peaches bathed in a  brown sugary, cinnamon  sweetness, topped with a light buttery crust sprinkled with sugar thats absolutely perfect in every way! Then garnished with a generous scoop of luscious whipping cream.  Mmmm....... It. was. HEAVENLY!     Or I could just cut out the fluff and echo Marks famous words........."It would make Hitler want to keep the commandments"  HAHA!  Yup!  That too. 
     
I cut 15 min. off the time so keep a close watch and as it starts to brown on the sides, its done.   I added brown sugar and nutmeg to the ' additional topping ' --- u cant go wrong! 
The boiling water amount--- I added a lil bit more. Maybe 1/4 c. til batter was barely wet.

For the filling:
8 large fresh peaches, peeled,  and sliced
⅓ cup organic brown sugar
⅓ cup organic sugar
1 tsp lemon juice
2 tsp corn starch
½ tsp cinnamon
¼ tsp nutmeg

For the topping:
1½ cups all purpose flour
⅓ cup organic brown sugar
⅓ cup organic sugar
1½ tsp baking powder
½ tsp salt
1 stick  butter, cut into small pieces
⅓ cup boiling water

Additional topping:
4 Tbs organic sugar
1½ tsp cinnamon

Preheat oven to 425°.
Peel, remove pits and slice peaches. Add to large mixing bowl. Sprinkle brown sugar, sugar, cinnamon, corn starch, lemon juice and nutmeg over peaches. Stir until peaches are coated. Pour into an ungreased 9 X 13 baking dish. Bake for 10 minutes, then remove from oven.

In a medium mixing bowl, whisk flour, sugar, brown sugar, baking powder and salt together.
Using a pastry blender, mix butter into flour mixture and blend until mixture becomes crumbly.
Pour in boiling water and stir until combined. Spoon mixture over peaches and spread gently making sure to cover the peaches. 

In a small bowl, mix organic sugar and cinnamon together and sprinkle on top of the cobbler. Bake for approximately 35 minutes, or until topping is golden brown. Top with whipping cream or vanilla bean ice cream.

Best served warm. Enjoy!
