Grandma Brown..... her banana bread was one of my favs! When I was a lil girl, I made grandmas banana bread with her several times over the summers. I never did get her recipe. After she went to the nursing home, I asked mom, the uncles, Barb, and Bethany for grandmas b.b. recipe. No one had it. What?!?! So I spent the next 5 years in search of her famous banana bread, making many loaves along the way. Some were close but I knew they weren't grandmas. My perseverance finally paid off. One day I came across a recipe that looked like it could be grandmas---I remembered as a lil girl dissolving baking soda and buttermilk--this had to be it. As I pulled the piping, hot loaf out of the oven, I knew it was grandmas. Mmmmm.....the smell... the taste ....it was just as I remembered! :) And yes, it left that 'signature' oil film on my hand after I savored each and every bite. Thanks grandma for taking time to bake with me and leaving a legacy of recipes for your grandkids/great-grandkids to enjoy. The optional topping is something I just came up with.
2 c. sugar
1/2 tsp. salt
2 1/4 c. flour
1/4 c. veggie oil
3 large eggs
1 tsp. vanilla
1 1/3 tsp baking soda
1/4 c. buttermilk
1 c. walnuts
4-5 brownish/black bananas
Heat oven to 350. Grease 2 loaf pans. In large bow, mash bananas with masher. dissolve baking soda in buttermilk. Use large container since it will foam up a bit. Mix all ingredients by hand and add 1 c. nuts. Bake for 1 hr. But watch at 45 min. as all ovens vary. Let cool for 15 min. on its side. Then after its cooled, remove from pan.
Optional topping: 1/4 c. brown sugar, 2 tsp. butter, 2 tsp. lime juice, 2 tsp rum extract, 2 Tbsp. pecans, 2 Tbsp. coconut
