Pumpkin Turkey Chili

My dad makes it all the time and so do I. It's a favorite. You could also brown the meat and throw everything in the crockpot. From Hasfit.com



Ingredients:
1 lb ground turkey
14.5 oz diced tomatoes
15 oz red kidney beans
1 chopped green bell pepper
1 chopped yellow bell pepper
½ medium yellow onion (chopped)
1 large minced garlic clove
1 1/2 cups canned pumpkin
1 cup low sodium broth
1/4 cup chopped fresh cilantro
2 tbsp chili powder
1 tbsp virgin coconut oil
1 tsp cumin
1 tsp of cinnamon
1 tsp sea salt
1/2 tsp ground black pepper
¼ tsp cayenne pepper

Directions:
First, heat the oil in a large skillet on medium-high heat. Brown the ground turkey and add in the onion, peppers, and garlic until tender (roughly 10 minutes). Stir in tomatoes, beans, pumpkin and broth.

Season with chili powder, cumin, sea salt, and pepper. Lastly, put on low heat, cover, and let it simmer for 25 minutes. Mix in fresh cilantro and serve.

  1. I made this last night and it turned out great! I was excited to try it because it has pumpkin and I make pumpkin everything, but hadn't tried it as a soup, so I was a little unsure of how it would turn out, and I was pleasantly surprised!     1. I did add the whole can of broth instead of just one cup since I like my chili a tad bit more on the "soupy" side.
