Sweetie Pie

A healthy dessert never tasted so incredible! This strawberry pie has NO added sugar, NO processed ingredients, is gluten free, dairy free, and is all natural--- yet so delicious!  It's a perfect treat when you want to indulge and satisfy your sweet tooth.  Kids devoured each and every bite of this creamy, luscious, praise worthy pie. 
We even gave it a cute lil' name.  :)

This recipe requires a springform pan and you will need to plan ahead (overnight).   Next time just for fun, we'll try raspberries or blueberries.







2 c. cashews soak overnight, drain next day. Set aside.

The next day, in a food processor,  blend  2 c. almonds.   Then blend 24 dates with the almonds.  This will be the crust. Press this mixture into a springform pan. 

In a blender, add the soaked cashews, 5 Tbsp lemon juice, 1/3 c. honey, ½ c. coconut oil, 1 tsp vanilla.  Blend. Then add 2 c.  strawberries.  Blend.   Add this on top of the nut almond/date mixture.  Freeze 2 hrs. or longer  Garnish with strawberries.

*The original recipe called for half the almonds & half the dates.   For me, this amount wasn't quite enough to spread around. The crust ended up being
thin & sparse.   Doubling the crust ingredients made it almost too thick but better to have more crust than not enuf.  Just a personal preference.
