Chocolate Covered Cherries

These choc. covered cherries are a perfect addition to any Christmas goody plate.  But before you get too excited and head for the store,  know that these take 2 weeks to set up.   Oh the anticipation!  The kids were sure to keep track of how many days til the cherries were ready.  :)  Today we finally got to eat some and were well worth the wait.   Experimental fun....our next batch we are going to be making with dark chocolate.  Mmmmmmm...... Its count down to New Years now!  :) 







  1. Drain cherries and set on paper towel and pat to dry
  2. In a medium bowl, combine butter and corn syrup until smooth. Stir in powdered sugar and knead to form a dough. Chill to stiffen if necessary. Wrap each cherry in about 1 tsp of dough. **See my notes below.**   Chill fondant until firm.
  3. In a microwave-safe bowl melt chocolate chips with oil for about 20 seconds at a time (stirring each time) until chocolate is just melted and completely smooth. **See my tip below**
  4. Dip each cherry in by its stem and place on wax paper-lined sheets. Place in an air-tight container (like a large tupperware or cookie sheet) and store in a cool place for TWO WEEKS (yes, it is a long time-- but patience... I promise they taste best if you wait until the fondant softens)!



**TIPS I learned making these. L.W.   
--It's absolutely important to use a broiler to melt chocolate. If you dont have one, just use two pots. Bottom pot fill with water and bring to low boil. Top pan has the melting chocolate. 
--Original recipe calls for 1 tsp fondant dough.  I found this to be way too much!  I used 1/2 tsp. fondant instead. 
--Wrap 1/2 tsp fondant around cherries and chill for 30 min.  Then coat in chocolate. 
--If you didnt get cherries with stems, use toothpicks to coat the cherries in the chocolate. If a toothpick slips off the cherry, take it out and put toothpick back in somewhere else. 
--Go light on the chocolate!  Don't dip cherries straight into the chocolate. Use a spoon to lightly coat around the fondant so that the heat of the chocolate doesn't melt the fondant too much. 
--Cover the cherries and set on high shelf in garage for 2 weeks and try to forget about em! hahaha :)
