Recipe From: Shae
Lately I've been trying out different flour-less/refined-sugar-free muffin recipes. Many have turned out great! This is one favorite. Be sure to use a high powered blender to be able to get the oats ground well. If you don't have one, use a food processor to grind the oats into a flour-like consistency before mixing the rest of the ingredients in a bowl with a hand mixer.
INGREDIENTS:
2 ripe medium-size bananas
1/2 cup almond butter
1/4 cup unsweetened vanilla almond milk
2 eggs
1/2 cup pure maple syrup or honey
1 tablespoon vanilla extract
2 and 1/4 cup rolled oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup fresh blueberries (or frozen and defrosted)
DIRECTIONS:
Preheat the oven to 350°F and then grease or line a muffin
tin for 12 muffins.
Starting with the wet ingredients first, place everything
except the blueberries into a blender or a food processor and blend for about
30 seconds, or until smooth.
Using a spoon, gently stir the blueberries into the batter.
Pour the batter into the muffin tin, filling each about 3/4th of the way full.
Bake in the oven for 20 minutes, until light golden brown.
Allow to to cool for at least 10-15 minutes before shoving
in your mouth. :)
