Recipe From: Shae
Anna made some delightful Chickpea salad sandwiches at Abby's birthday party, and after tasting them, I knew I had to make them for my family. Here is a recipe I found and tried tonight. Brielle saw me chopping the veggies and gave a "grossed out" look, but as soon as she finished her first (whole) sandwich, she asked for a second, and then one for her lunch tomorrow. :) I love to toast my bread for sandwiches, and I swapped out the original recipe's ingredient of pickles for cucumber.
Ingredients:
1 can chickpeas (garbanzo beans), drained
2 celery sticks
½ small red onion
1 large cucumber
2 heaped tablespoons of coconut or regular yogurt, or more if desired
1 teaspoon tahini
juice of ½ a lemon
sea salt and pepper to taste
SANDWICH SUGGESTIONS:
Toasted sprouted whole wheat bread, sourdough or rye bread,
raw wrap or lettuce cups
Avocado, mashed
Sliced pickles
salad greens
Sliced tomatoes
sprouts
Instructions:
Finely dice the celery, red onion and cucumber.
Mash the chickpeas with a fork then combine all ingredients
in a large bowl. Mix well to combine. Season with salt and pepper.
Toast your bread of choice, spread on chickpea salad, assemble desired sandwich ingredients on top.
