Healthy Oat Bran Muffins

I heart muffins. 💝  But who doesnt? lol   In my book, a healthy muffin is the way to go so long as you find one that doesnt taste like cardboard. lol  These are super healthy AND delicious! They are also great to make ahead and freeze for mornings on the run.  Our babysitter shared these muffins with us and we really enjoyed them.    

2 1/4 c. oat bran (not bran flakes)
1 Tbsp. baking powder
1/4 c.  healthy sweetener** see below**
2 Tbsp. chopped almonds
2 overripe bananas
1  1/4 c. nonfat milk
whites of 2 eggs or 1 large egg
handful raisins or blueberries
1/4 c. coconut (optional)


Mix all dry ingredients in a bowl. Blend all other ingredients into a puree & FOLD in with dry ingredients. Fill muffin tins, allowing room for mix to rise. Add blueberries on top. Bake 450 for 11-13 min.  or til muffins are light brown. 


***Healthy sweeteners-- an alternative to processed sugar
A or B grade pure maple syrup, honey,   xylitol ground to fine powder, coconut sugar ground up,  organic sugar unrefined, or  stevia-use less than what recipe calls for.  See stevia guidelines https://sweetleaf.com/stevia-conversion-chart/   when baking with stevia.
My first choice for a healthy sweetener  is Sucanant that is ground to fine powder for any baking you do.  You can purchase it at Whole Foods or Cliffs Country Market.
