Can I just say......YUMMEEENESS right here!! The kids and I absolutely loved this tasty,delicious,mouthwatering chicken! The pineapple alone takes it to a whole new level! Oh, but then theres the sauce! Oh the sauce alone is To Die For! mmmmmm..... HEAVENLY, girls!! Definitely a 5+ star rating that will certainly be in my repertoire of go to recipes. 😋 Serve with my Carmelized Brown Sugar & Cinnamon Pineapple. 🍍
4 pounds boneless skinless
chicken thighs, ( I prefer thighs for that Hawaiian flavor but c.breasts will
work)
1 cup unsweetened pineapple juice
½ cup soy sauce (I use Liquid
Aminos for a healthier, non soy alternative)
½ cup brown sugar
⅓ cup ketchup
¼ cup chicken broth
2 teaspoons fresh ginger root,
grated
1½ teaspoons minced garlic
green onions, sliced for garnish
In a medium sized bowl, whisk
together pineapple juice, soy (or amino) sauce, brown sugar, ketchup, chicken
broth, ginger and garlic. Reserve 1 cup sauce for pouring over individual
servings of cooked rice. Add the
chicken thighs and sauce to a ziplock bag and marinate at least 3 hours or
overnight.
After chicken has soaked up the
sweetness, cook chicken with some of the marinade (enuf to just fill the bottom
of pan). Cover with lid and simmer til
cooked all the way thru chicken. Garnish with green onions if desired.

Sugar&Cinnamon Pineapple -----------recipe link here-----. I also served with jasmine rice. I add 3/4
c. fresh pineapple tidbits with rice & water then cook as usual. When rice is done, add some green onions & fluff with fork. Add cilantro and squeezed lime to taste if
desired. Then for the best part of all, take the 1 c. reserved marinade and
cook on low-med for 5 min. Pour a a lil
bit (or a lot like I do 😉) of that yummy sauce
over individual servings of rice, then add the savory chicken & sweet
glazed pineapple. Enjoy!!
Huli Huli Marinade is an
intensely sweet and savory teriyaki-style sauce popular in Hawaii. ...
"Huli" means "turn" in Hawaiian, and legend has it that the
name comes from the fact that the man who created it, made it by cooking the soy-marinated chicken
between two grills, turning the grills on their sides to do so. Hawaiians cook Huli Huli chicken on a
rotisserie & over an open fire. You
could also grill it and still get that delicious glazed texture.
