While I have many tearful good byes to those sweet summer
days, I do welcome fall season for all
things pumpkin! Every fall, I have a
plethora of yummy lookin' pumpkin recipes that I want to make & this
delicious pumpkin butter was on the top of my list to try. It turned out Aaaahh-Maay-Zing!! We spread this pure yummeeness on toast
& gobbled it up with much delight. 😋
Try it on bagels, pancakes, waffles and English muffins.
Ingredients
1 C unsalted
butter (softened)
1 tsp cinnamon
6 TBSP pumpkin
puree
4 TBSP honey
1 tsp vanilla
extra honey for
the drizzle (optional)
Instructions
1. With an electric
mixer beat the butter until smooth.
2. Beat in the
cinnamon and 1 tablespoon of the pumpkin puree until well combined.
3. Begin to add 1
tablespoon of pumpkin puree every 30 seconds while continuing to beat the
mixture
4. Continue to beat
the mixture while adding in the honey and vanilla. (Beat until thick and
fluffy, about 2 minutes)
5. Transfer into a
sealed container.
6. Keep in the
refrigerator.
7. Before serving
drizzle with honey.(optional) ENJOY!
