Oh the heavenly smell & flavors of this sweet comfort food! These Chicken Poppers are so delish that the kids gobbled em right up! We absolutely loved them dipped in a mixture of BBQ sauce/sour cream. Sweet potatoes are rich in fiber, vitamins,and minerals. Makes for a fabulous appetizer as well.
- 1 lb ground chicken (uncooked)
- 2 cups uncooked sweet potato, finely grated (you can use your food processor)
- 2 tbsp coconut oil + 1 tsp for greasing the baking sheet
- 2 tbsp coconut flour
- 4-5 single stalks green onion, chopped fine
- 2 tsp garlic powder
- 2 tsp onion powder
- 3/4 tsp Himalayan sea salt
- Optional : 1 tsp paprika or chili powder, adds a kick!
- Preheat the oven to 400 F and lightly grease a lined baking sheet with coconut oil. Take the raw sweet potato and squeeze it with a paper towel or cheese cloth to remove any excess liquid. Then, combine all of the ingredients in a large mixing bowl and thoroughly combine. Begin rolling the mixture into small, slightly flattened poppers about one inch in diameter (you’ll have about 20-25 poppers) and place them on the cooking sheet .
- Place in the oven for 10-12 minutes, flipping half way through. Take out of oven, sprinkle tops with cheese, then put back in oven on broil for 1 min. Remove from oven and serve with your favorite sauce! Guacamole, ketchup, mustard, ranch, etc. **I loved these babies served with a mixture of BBQ sauce/sour cream.
