Have you ever looked at the ingredients in your store bought
salad dressings? Ya know what I'm
talkin' about then.... all those wicked chemicals, preservatives & sky hi
amounts of sodium. 😱 Yikes! So that's why I make my own dressing. For all you salad lovers....this tangy &
sweet honey lemon vinaigrette is super delish, really healthy & completes a
salad beautifully!
Zest from 1 lemon
1/4 cup fresh lemon juice
1 tablespoon apple cider vinegar
1 teaspoon Dijon mustard
1/2 teaspoon kosher
salt
1/8 teaspoon black pepper
1/4 cup honey
3/4 cup olive oil or vegetable oil
1 clove of garlic, minced
Combine lemon zest and juice, vinegar, mustard, salt,
pepper, and honey in a blender. Blend
until smooth. With blender running on
low speed, slowly drizzle in oil until emulsified. Let sit for at least an hour
so flavors can 'meld'. Store in fridge
when not in use. Yields a little over 1 cup.
*The original dressing recipe didn't call for garlic. I thought it would be a nice addition so I
incorporated it in the recipe. You can add it or leave it out. - L.W.
