Chocolate Brownies

Served at the Memorial Day BBQ. 

1 cup (2 sticks) unsalted butter
4 oz unsweetened chocolate bar (i used Ghiradelli's 100% cacao)
2 cups granulated sugar
4 large eggs
1 1/2 cups unbleached flour
1 tsp kosher salt
1 tsp baking powder
2 tsp vanilla

Preheat oven to 350 degrees and grease and line a 9 X 13 baking pan wax paper.  In a mixing bowl, whisk flour, baking powder, and salt.

Chop up the chocolate bar into chunks and add it along with the butter into a medium sauce pan. Heat over low heat, stirring often until all chocolate is melted. Remove off of the heat and let it cool slightly.  Next whisk in the sugar to the chocolate mixture and then add in one egg at a time, whisking after each egg.  The batter should thicken because of the eggs. Pour chocolate mixture into the dry ingredients and combine just until the flour gets incorporated.  Next pour the brownie batter into the prepared baking pan. Spread out evenly and bake on the middle rack of your preheated oven for 18-20 minutes, or until a tester comes out with only a few crumbs attached. Bake for less time for more of a fudgy brownie. Cool and Frost.

 **************FROSTING**************************

1/2 cup (1 stick) unsalted butter at room temperature till softened
1 1/4 cup powdered sugar
3 tbsp cocoa powder
2 tbsp milk
1/2 tsp vanilla

Mix butter and cocoa powder in electric mixer. Add milk, vanilla, and powdered sugar until smooth.
