Sister Wood's Apple Pie-The BEST ever!

While visiting Shana in TX last week, she raved over this apple pie recipe.  



6-7 apples (a variety is best), peeled and sliced thin
1 T. lemon juice
½ c. sugar
½ c. brown sugar
3 T. flour
1 t. cinnamon
½ t. nutmeg
¼ t. salt

Sprinkle apples with lemon juice. Combine remaining ingredients. Toss with apple slices. Place in 9 inch unbaked pie shell. Put chunks of butter on top, then top crust. Cut 2-3 slits in top crust to allow steam to escape. Brush with beaten egg then sprinkle with sugar and cinnamon. Bake 60 minutes at 400.

Pie Crust: 
1 ¾ c. Crisco shortening
1 T. sugar
1 t. salt
4 cups flour (bread flour works best)
Scant ½ c. cold water (deathly cold water)
1 egg
1 T. vinegar
Cut first four ingredients together until crumbly and thoroughly mixed (I use a fork, but you can use a pastry cutter) In a small bowl, mix cold water, egg, and vinegar until well blended. Add to crumbly mixture and work with hands into a large ball. (Mix gently and until all ingredients are well incorporated). If dough is too sticky, sprinkle with a slight amount of flour and work into dough. Roll out between 2 pieces of waxed paper.

*This makes 4 crusts.
*If you are making a single crust pie, refrigerate 30 minutes before filling.
