Another healthy recipe for the win! Even my pickiest eater
who took one bite, quickly requested I make these the next day. 😁 Oh for sure, I
will be making these again & again.
The meatballs turned out juicy and the sauce was outta this world! The turkey
was a nice change from the regular chicken and beef. Serve meatballs & sauce over a bed of
rice . Oh yah.... the only thing I would change is double the sauce. Sooooo Deeeelish!
1 lb. organic ground turkey or chicken
1/2 cup shredded carrots
1/4 cup scallions, chopped
2 cloves garlic
1 tbsp fresh grated ginger
2 tbsp coconut aminos*see bottom*
1 1/2 tsp chili paste or chili sauce
Dash fine pink sea salt
Optional: Dash red pepper flakes
Sauce:
1/4 cup coconut aminos*
2 tbsp extra-virgin olive oil or sesame oil
1 clove garlic, crushed
2 tsp fresh grated ginger
1 tsp chili paste or chili sauce
1 tbsp fish
sauce (optional)
Directions:
Preheat oven to 375 .
In a bowl combine all meatball ingredients.
Mix well and form into balls.
Place balls on lined baking sheet and bake for 15-20 minutes.
While baking, combine all sauce ingredients in a small pot
over medium heat
Once boiling, stir, and reduce heat to a simmer.
When meatballs are done pour sauce over it, or use sauce as
a dipping sauce.
*Coconut aminos is a healthier version of soy sauce. May
substitute coconut aminos for soy sauce if thats what you have.*
