Instant Pot BBQ Bacon Meatloaf

Meatloaf is a default dinner for company.  It reigns supreme. 
 A North star.  A culinary delight. A comfort food.  A healing balm.  A world wide tradition.
 A cooks masterpiece.  But you see,  this isn't  just any meatloaf.  
This meatloaf is sure to gladden the heart!  The kind of meatloaf where drama unfolds.... 
a tender, juicy, hearty beef that's wrapped in a sweet, tangy  barbeque bacon flavor, 
 captivating those taste buds, flying off to euphoria-ville, living Happily Ever After.  True story. 


Meatloaf Mixture
1 1/4 lb. ground beef
1 egg
3/4 c. panko breadcrumbs
1/2 c. milk
1/2 c. parmesan cheese- the real stuff
1 tsp salt
1/2 tsp pepper
1 tsp. dried oregano 
1/2 tsp chili powder
1 tsp garlic powder
1/2 c. minced red onion
4 slices bacon

BBQ sauce

1 c. ketchup
1/4 c. molasses
1 Tbsp minced onion  
1/2 tsp garlic powder
1/2 tsp dried oregano
1 tsp. salt
1/4 tsp. thyme
**1/4 tsp cayenne**(see below)

In medium bow, mix beef, egg, breadcrumbs, milk, parmesan, salt, pepper, 
oregano, chili powder, garlic powder and onion.  
Mix with clean hands then for mixture into loaf. Put meatloaf in 7 in. springform pan. 
Lay strips of bacon across top of meatloaf then tuck ends underneath.  

**Laura's notes-- I didn't have a springform pan thats made just for the instant pot, 
so I did mini meatloafs in the disposable mini tins, then used the trivet to stack them 
on top each other in the IPot.  If you didnt want to use the InstantPot, 
put meat mixture in a bread loaf pan and bake at 350 for 45-55 min. & cover loosely with tin foil.  
Just be sure to put BBQ sauce on top before baking. :) 
   
In separate bowl, mix all BBQ sauce ingredients. Pour 1/2 c. of sauce on top of meatloaf. 
Loosely cover pan with piece of foil.  

Pour 1 c. water into Instant Pot, set in the trivet, then put springform pan on trivet.  
 Put lid on Instant Pot, turn valve to sealing, then cook for 35 min. on high pressure. 

 Carefully 'quick release' pressure when cook time is complete. 
Discard foil then transfer meatloaf to serving platter.  
Pour 1 c. BBQ sauce on top of meatloaf, and put meatloaf under broiler in oven til sauce is bubbly, 
for 5 min.  Serve meatloaf with rest of BBQ sauce for dipping.  

Serve w/ mashed potatoes & green beans. For a lil xtra pizazz, garnish meatloaf with parsley if desired . :) 
** 1/4 tsp cayenne gives the BBQ  a lil' pep.   
**My kids LOVED it but for younger kids, you may wanna leave out the cayenne or do 1/8 tsp. instead**
