This momma loves wholesome nutritional treats for her kids. These delicious raspberry coconut balls are perfect for that after school snack attack or great for the grab-n-go. I modified this recipe just a touch -- added dates instead of raisins and added dark cacao chips for that extra sweetness & crunch. Just freeze 'em til ready to eat. Oh, you'll wanna triple the recipe! These go fast with hungry kiddos! :) Enjoy.
For best results, use a food processor-- results are compromised if you use a blender.
1/2cup almond flour
1/3 cup unsweetened desiccated coconut
1/2 cup frozen raspberries
2 medjool dates, pitted
1 Tbsp almond butter (optional)
Small handful of dark choc. cacao chips
1/3 cup unsweetened desiccated coconut (FOR ROLLING)
INSTRUCTIONS
Put all the ingredients (apart from the coconut for rolling) into a food processor and blend until smooth.
Roll into balls (I made 14) and coat in coconut.
