The dessert of your dreams! This is the scrumptious Peaches n Cream dessert served at 4th of July BBQ. Beej said, "It reminds me of a dessert that grandma would have made!" I thought the same thing!
¾ cup all-purpose flour
½ teaspoon salt
1 teaspoon baking powder
1 (3 ounce) package non-instant vanilla pudding mix
3 tablespoons butter, softened
1 egg for the crust,
1 egg for brushing
½ cup milk
2 (29 ounce) can sliced peaches, drained and syrup reserved
1 (8 ounce) package cream cheese, softened
½ cup white sugar
MIX TOGETHER
1 tablespoon white sugar
1 teaspoon ground cinnamon

Step 1
Preheat oven to 350 degrees F . You can make this as a pie or a
dessert. Grease sides and bottom of a 10
inch deep-dish pie pan OR an 8 x 8 pan.
In a medium mixing bowl, mix together flour, salt, baking powder and pudding mix. Mix in butter, egg and milk. Beat for 2 minutes. Pour mixture into pie pan. Bake at 350 for 10 min. Now take the second egg and separate the yolk from the white-- discard yolk. Brush egg white on top of batter (this acts as a protein barrier so peaches dont get the batter soggy) Bake for 2 min. Arrange the 1 1/2 cans of the peach slices on top of the semi cooled pudding batter. Save the last 1/2 can of peaches and dice up. Reserve the diced peaches for cream cheese mixture.
In a small mixing bowl, beat cream cheese until fluffy. Add
1/2 cup sugar and 3 tablespoons of the reserved peach syrup. Beat for 2
minutes. Add in the diced peaches. Spoon mixture over peaches to within 1 inch
of pan edge. Mix together 1 tablespoon sugar and 1 teaspoon cinnamon, and
sprinkle over top.
Bake in a preheated oven for 20 minutes, until golden brown. Let cool for 15-20 min. so it has time to 'set up'. Serve warm or chill before serving. Serve with a scoop of vanilla bean ice cream.
