This dreamy Strawberry Shortcake Cookie Pizza will win your heart with its tender sugar cookie crust, accompanied by a rich decadent cream cheese layer spread a top, studded with juicy bits of fresh strawberries, and drizzled with sweet strawberry jam. (We drizzled a lot more strawberry jam than the picture shows.)
Makes for a delicious gluten-free dessert too. We used gluten free flour (from Costco) and it turned out perfect.
COOKIE PIZZA
6 TBSP unsalted butter, softened
1/2 granulated sugar
1 egg
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp baking powder
1 1/4 cups all purpose flour, plus more for the work surface
TOPPING
1 (8 oz.) block of cream cheese
3 TBSP heavy cream or milk
1/2 tsp vanilla extract
1/2 cup powdered sugar
2 cups fresh sliced strawberries
1 cup strawberry jam
Preheat the oven to 350. Lightly coat a pizza pan with cooking spray or line a baking sheet with parchment paper. Lightly dust a work surface with flour.
To make the cookie pizza, in a large bowl, add the butter and sugar and beat until light and fluffy. Add the egg and vanilla. Sprinkle the salt and baking powder over the dough and beat for 1 min. Gently stir in the flour. Transfer the dough to floured work surface. Roll the dough into a 12-in circle. Transfer the dough to the pizza pan or baking sheet. Use your fingers to push the edges of the dough to create a built up edge that looks like pizza crust. Bake for 18 to 20 min or until set and just getting ready to turn brown. Cool the crust completely.
To make the topping, in a medium bowl, beat the cream cheese, cream, vanilla, and sugar until light and fluffy. Spread over the pizza, leaving the rim bare. Cover with the sliced strawberries. In a small microwaveable bowl, microwave the jam until warm and drizzle over the top. Let the pizza stand for 10 min before cutting into wedges.
