Recipe From: Shae
I checked out the Healthy Girl Kitchen cookbook from the library, and enjoyed trying out some of the recipes. This was a favorite in our house! I keep them in the fridge to snack on anytime!
1 15 oz can of chickpeas rinsed and drained
5 medjool dates (make sure they are softened; if not, soak in water)
1/2 cup creamy peanut butter
1/4 cup rolled oats
1/4 cup coconut sugar
1/4 cup maple syrup
1/2 cup vegan chocolate chips
1 tsp vanilla
sea salt garnish
Instructions:
Blend all ingredients in food processor except chocolate
chips until smooth.
Fold in chocolate chips until combined.
Roll into 1-inch balls (dampen hands to prevent sticking)
and add onto a plate. If you want, add more chocolate chips to the outside of
the balls like I did.
Garnish with sea salt.
Allow bites to firm up in fridge for 30 minutes.
Serve and enjoy!
