Panda Express Chow Mein

I've made this many times and it has become a family favorite. I have adapted it slightly from the original recipe to give more flavor. When you purchase the refrigerated Yaki-Soba noodles, you'll find them near the produce section at Winco. They are about $3 for the 2-pack, but they have a great consistency and don't bunch up as much as the regular ramen. However, you can use regular ramen noodles as noted below. I highly recommend using sesame oil instead of olive oil because it gives such a great flavor to this dish. We have also cooked in some sugar snap peas (still in the pod) when I have made this, and they were a great addition.





1/4 cup reduced sodium soy sauce
3 cloves garlic, minced
1 tablespoon brown sugar, packed
2 teaspoons freshly grated ginger (I add more for greater flavor)
1/4 teaspoon pepper
2 (5.6-ounce) packages refrigerated Yaki-Soba, seasoning sauce packets discarded (or 3 packages ramen noodles, packets discarded)
2-3 tablespoons sesame oil (recommended), or olive oil
Half of an onion, diced
3 stalks celery, sliced diagonally
2 cups shredded cabbage (I add a little more)
Sesame seeds (for garnish)

DIRECTIONS:
In a small bowl, whisk together soy sauce, garlic, brown sugar, ginger and white pepper; set aside.

In a large pot of boiling water, add Yaki-Soba (or ramen) until loosened, about 1-2 minutes; drain well.

Heat sesame oil in a large, high-sided skillet over medium high heat. Add onion and celery, and cook, stirring often, until tender, about 3-4 minutes. Stir in cabbage until it shrinks a little and is heated through, about 2 minutes.

Stir in Yaki-Soba and soy sauce mixture until well combined, about 2 minutes. Garnish with sesame seeds. 

Serve immediately.
