Homemade Thousand Island Dressing

We used to eat A LOT of taco salad in our house! That is until I realized the 'healthy' Litehouse Thousand Island dressing we topped our taco salad with wasn't as healthy as I thought.  So the other day,  I found a homemade version in a popular cookbook and tried it out with great success.  Kids are happy to be having taco salad again!   Reuben on Rye fans.... this dressing would be scrumptious on your Reuben sandwich.... How I LOOOVEE me a Reuben! mmmmm........... YUM-MEE!!!  If you’ve never tried a Reuben, order one the next time you dine out.  Arbys makes a phenomenal one...with a side of Thousand Island of course.  ๐Ÿ˜‹๐Ÿ˜‰๐Ÿ’




 ¾ cup avocado oil based mayonnaise
 2 TBSP ketchup
 ½ tsp. minced garlic
 1 Tbsp. hot sauce (I left this out for kids sake)
 2 Tbsp. minced onion
 ½ dill pickle spear (could also do 2 tsp sweet relish)
 Salt and pepper to taste

Put all ingredients in blender  & pulse til desired level of creaminess.

*Once all ingredients are blended, I like to add a lil bit of minced dill pickle spear into the dressing for a lil crunchy texture.
