Sesame Peanut Butter Noodles

 I love peanut butter in both sweet and savory dishes and I love how quickly this comes together on busy nights. We always double or sometimes even triple this to have large portions for each of us. Don't skip the sesame oil- it really gives a flavor boost. Make sure to add plenty of veggies! 



6 oz. of your favorite Asian noodles like soba, rice noodles, or even ramen noodles (without the flavor packet)

2 tbsp. pure sesame oil

1 1/2 tbsp. peanut butter

2 tbsp. honey

2 tbsp. soy sauce

1 1/2 tbsp. rice vinegar

1 garlic clove, minced

½ tsp. grated fresh ginger root

Stir-fry veggies (bell peppers, mushrooms, peas, broccoli, onions, shredded carrots, etc.)

Sesame seeds

Optional Garnishes: 3 sliced green onions, siracha hot sauce, cashews


Instructions:

Sauté your veggies of choice with sesame oil in a deep skillet over medium heat. 

Cook the noodles in a separate pot and drain according to the package directions.

In a medium bowl, add the sesame oil, peanut butter, honey, soy sauce, rice vinegar, garlic, and ginger. Whisk until well combined. The peanut butter should completely break down to create a smooth sauce.

Pour the sauce over the hot noodles into the pan with veggies.  Toss to coat.
