Chicken Salad

1 1/2 c. plain yogurt or mayo
5 c. chicken, diced & cooked
2 TBSP. olive oil
2 TBSP. OJ
2 TBSP. vinegar
1 TBSP. salt
3 c. brown or white rice
1 1/2 c. grapes
1 1/2 c. celery, diced
Optional - 1 can pineapple tidbits, 1 can mandarin oranges, 1 c. almond slivers

Mix oil, chicken, OJ, vinegar, & salt in bowl. Let sit 5 min. Mix in rest of ingredients.
