Mock Mint Julep

(Drink from Shae's baby shower)


4-5 mint sprigs
1 1/2 c. sugar
2 c. cold water
3/4 c. lemon juice
1 1/2 qt. ginger ale
thinly sliced lemon (garnish)

Rinse mint and discard stems. Mix sugar,water,lemon juice in medium saucepan. Stir in mint leaves. Bring to simmer and let stand 30 minutes. Strain mint sprigs. Let syrup come to room temperature. Fill a large pitcher with ice. Add gingerale and lemon slices.
