1 tsp olive oil
3/4 c. chopped onion
1 garlic clove, minced
3/4 c. uncooked pearl barley
1 3/4 c. chicken boullion
1 1/2 c. chopped zucchini
1 1/2 c. halved cherry tomatoes
1/4 tsp kosher salt
1/4 tsp black pepper
2 tbsp feta cheese
chopped fresh parsley
heat oil in large saucepan over medium high heat. Add onion and garlic. Stir in chicken boullion prepared with water, barley,zucchini,tomatoes, salt and pepper. Cover and cook 25 minutes. Top with 1 1/2 tsp feta cheese and parsley.
