2 tablespoons butter
1 cup flour
1 ½ tablespoons baking powder
½ cup milk
4 tablespoons sugar
½ teaspoon salt
1 egg
Have dough almost runny or soft enough to pour over hot fruit that has been sweetened. Thicken with cornstarch for plum and huckleberry or tapioca for rhubarb. Add salt, lemon juice and butter.
Bake in a moderate oven until top is brown and dough is cooked through.
Double recipe if you use a 9 x 13 inch pan.
