I made these lil babies today as I was looking for some fun & healthy after-school snack ideas. They're super easy, quick, and good for you! (choc. is good for you in moderation, right? ) Everything put together in 5 min.
1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed (I used chia seed)
1/2 cup mini chocolate chips
1/3 c. dried craisins or other dried fruit
1 tsp vanilla
1/2 tsp. cinnamon (optional) Original recipe doesnt call for cinnamon but thought it would add a nice flavor
Mix everything above in a medium bowl until thoroughly incorporated. Let chill in the refrigerator for half an hour. Once chilled, roll into balls and enjoy! Store in an airtight container and keep refrigerated for up to 1 week.
