I got this recipe from at healthy potluck at my chiropractors to kick off a summer fit challenge Stuart lost the most weight out of the group....18 lbs in six weeks ! This yummy treat tastes just like reg. zucchini bread! You can get rice flour and almond flour at Winco in bulk.
1 c. rice flour
1 c. rice flour
1/2 c. almond or potato flour
3/4 c. honey
1/2 tsp. baking soda
1/2 tsp. baking powdr
2 eggs
1/2 c. coconut oil
2 1/2 - 3 c. zucchini blend with 3/4 c. water
Bake at 350 for 50-55 min.
