Recipe From: Krista Lewis
I made this recipe on Labor Day 2014. I just added brown rice to it the next day, and it tastes complete!
1 15 oz can kidney beans
1 15 oz can of black beans
1 15 oz can garbanzo beans
1 tomato chopped
1 small onion chopped
2 celery ribs chopped
1/3 cup of red, yellow, and orange peppers chopped
2 tbsp lemon juice
3 tbsp fresh basil or 1 tbsp of dried basil
1/2 tsp salt
1/2 tsp pepper
1/8 tsp cayenne pepper
3 tbsp olive oil
1 tbsp dried oregano
Mix the first 7 ingredients in a bowl. Then whisk the remaining ingredients in a seperate bowl. Combine and mix all ingredients. Chill for 4 hours in refrigerator. Add cooked brown rice or quinoa to it.
