Recipe From: Laura Watson
This was the juicy, mouth watering, berry salad that was enjoyed by all at Kirk's graduation party. Here's to a perfect salad for those warm summer days just around the corner. Yeah!
9-10 cups organic mixed salad greens, cut up
1 small package of frozen berry mix
OR
1 c. EACH of fresh raspberries, strawberries, blueberries
(Ideally, you want fresh fruit as the frozen ones left behind some juice and messy as u stir)
1/2 c. sugar covered almonds or pecans (I got em at Winco in bulk or make your own*)
optional
1/8c - 1/4 c. feta cheese
Dressing
2 1/2 Tbsp Olive Oil
3 Tbsp Honey
1/2 c. raspberries (I threw in a handful of huckleberries as well)
1/4 c. white wine vinegar
1/4 tsp. salt
Blend the dressing ingredients all together in blender. When ready to serve, toss berries, dressing and greens together.
*If you want to make your own sugar pecans or sugar coated almonds, toss nuts in a buttered skillet on medium heat. Add about 1 1/2 tbsp. sugar and sprinkle 2 teaspoons of cinnamon. Stir til nuts become a light brown; remove from heat.
