For all you instant Pot owners, this one’s for you. 😊
Logan has been doing some fun things in 5th grade, one of them being that he chose a life skill of his choice to demonstrate at a Life Skills fair to the whole school.
Getting started…. he wanted to learn how to cook in the Instant Pot so he could be more involved with dinner. So we got to work and checked out lots of Instant Pot cookbooks from the library. We happened upon this recipe which seemed kid friendly, quick n easy, and looked quite scrumptious. Sure enough, this meal was all of that and more! At the Life skills fair at school, the drumsticks were a huge hit with everyone who sampled em! And the sweet aroma! Ahhh… intoxicating….
At home, we paired the drumsticks with a simple wild rice herb pilaf. Logan also impressed us by satisfying our sweet tooth with an Instant Pot Apple Crisp. Delish! Now to find me a couple more Instant Pots so dinner, side dish and dessert can be cooking at the same time.
This is also a wonderful dish for days when you forgot to thaw meat, too tired to cook or just don’t know what to cook for dinner. Its super easy! Always have a package of thighs or drumsticks on hand and dinner is saved. 😊
2 tsp. garlic powder
1 tsp. onion powder
1 tsp. parsley
1 tsp. salt
¼ tsp. cayenne
½ tsp. thyme ( I used fresh)
½ tsp. paprika
½ tsp. allspice
¼ tsp . nutmeg
¼ tsp. cinnamon
3 lbs. chicken drumsticks
Stir spices together. Toss mixture with drumsticks. Add seasoned drumsticks to I.Pot. Pour in ½ c. water and set cook time for 10 min. on high pressure. When cook time done, let pressure naturally release for 10 min. Then quick release the rest of pressure before removing lid.
Goes great with Wild Rice & Herb Pilaf!! Great freezer meal—just mix drumsticks and seasoning and freeze. When ready to eat, add to IP then cook just as above instructions.
Original recipe called for ½ tsp. cayenne but we thought it was too spicy so we cut in half—perfecto!
