Chocolate No Bake cookies are a tried and true classic. So quick and easy to make, bringing back the nostalgia of childhood school lunches, picnic at the park and potlucks. Besides that, nothing beats the combination of peanut butter and chocolate-- a match made in heaven! These chocolate no bakes are amazingly healthy AND soooo delicious; you won't feel guilty eating 'em! Brooklyn added a handful of almonds for a lil more crunch. For a lil sweet n salty pleasure, I like mine w/ tiny bits of pretzels mixed in.
And just for kicks -n- giggles, I would love to hear what memory you have tied in when making/eating these cookies? What is your favorite childhood park and why? I equally enjoyed Sunset & Camels Back Park for playing, Veterans park for swimming. :)
1 cup peanut butter
1/2 cup honey
1/2 cup coconut oil
2 cups dry oats
1 cup shredded coconut
1/2 cup walnuts
1 1/4 cup choc. chips**
1 tsp. vanilla
OPTIONAL- 1/4-1/3 cup chia seeds, sunflower seeds, flax meal, pumpkin seeds

I always think of summer, Family Home Evenings, or Kirk when it comes to these cookies. He was always making them, it seemed! Camel's Back is the first that comes to mind when I think of childhood park memories. The old playground set up it used to have drew me in as it seemed to be more unique than other parks.
ReplyDeleteKirk def comes to mind when making these! There was a time it was 1 am and somehow Daren and I convinced Kirk to make these for us 😁. Camels back is definitely the favorite park although I was pretty scared of that dark slide! I always liked Eagle island for the swimming. Thanks for the recipe Laura! I won’t say how many of these I ate at your house yesterday ☺️
