Sheet Pan Pancakes

2 C Flour

2 tsp Baking Soda

2 TBSP sugar

1 tsp kosher salt

2 C Buttermilk

2 Eggs

1/4 C Butter (for pan)

Whisk buttermilk and eggs well in a large bowl, then add in all of the dry ingredients and mix until just combined. Grease a 12x18 baking sheet with the butter, and then pour the batter directly over the top. Use a knife to spread it evenly over the pan. Top with any fruit you like. Bake in a preheated oven at 350 degrees for 20 minutes.
